How to use Jax kitchen - Complete the Jax Kitchen Commissary Client Application, sign the Jax Kitchen Client Agreement, pay the registration fee and purchase first month’s minimum hours (first month becomes active the day of your DBPR inspection).
Monthly Rental Hour Rates
Rental of the kitchen is based on the number of Rental Hours Client will use the kitchen in a contract month (minimum of 10 required each month to claim Jax Kitchen as your commissary). All rental fees are collected prior to the use of the kitchen. Caterers and Food trucks agree to a monthly contract.

Add on Rental Hours during the month are at the related cost per hour when voluntarily paid. In the event that Client goes over Client’s paid for Rental Hours and Jax Kitchen has to determine Client’s number of Rental Hours used.
All fees are based upon 1-3 persons from the same company working. If Client exceeds 3 workers the rate increases to an additional $7.00 per hour for each additional person.
Rental fees are non-refundable and Client may carry-forward a maximum of ten unused hours to the next month.
Food Truck (Mobile Food Dispensing Vehicle or MFDV) $110-$175 monthly
Less than 10 days a month - $110 More than 10 days a month- $185
Food Truck use of Jax Kitchen is billed on a monthly basis. All rental fees are collected prior to the use of the kitchen. Does not include any use of the food preparation side of Jax Kitchen. Additional services are available as described above and below. (no vehicle storage is available)
Food Truck services included:
Dumping of waste water - Receiving potable water – Garbage disposal
Dish and equipment washing - Cooking oil and grease disposal bin
Registration, Fob, Initial Inspection Fee and Last Month's Rent (gives you scheduling program access)
$75.00 fee and payment of last month's minimum hours (first month is due on the day of your inspection) are required prior to listing Jax Kitchen as your licensed kitchen or primary commissary.

Cleaning Fee
A $25.00 an hour cleaning fee is charged to Client’s account if Jax Kitchen has to clean up after Client. Client should use the Clean-up Checklist so the areas the Client used are ready for use by the next person.
